FRESH HERBS—LOVE ’EM!

Herbs add so much flavor to dishes without resorting to calorie-heavy sauces or oils (another reason I included herbs in my list of “meal boosters”). But a lot of people just don’t know what the heck to do with them. So here are some ideas:

Basil + sautéed shallots + grape tomatoes = an amazing topping for fish or chicken or even stirred into quinoa

Dill + lemon + minced garlic + dollop of Greek yogurt = a delicious dip for crudités or sauce for grilled salmon

Cilantro + lime zest and juice + chopped scallions = a fab topping for fish tacos (also great stirred into a bit of brown rice)
